Bob's Pinacolada Cookies
(Non-alcoholic, just pineapple and coconut)
1 cup butter
2 eggs
1 12-oz can frozen pineapple juice defrosted
2 cups whole wheat flour
1 tsp baking soda
3 cups rolled oats
1 cup crushed pineapple strained
1 cup shredded coconut
Cream butter in a bowl. Add eggs and vailla. Mix well. Add defrosted
pineapple juice and mix. Combine flour and baking soda. Add to liquid
mixture. Mix well. Stir in oats, coconut and pineapple, Mix well. Drop
by rounded tablespoons on ungreased cookie sheet. Bake at 350F for
10-15 minutes until light golden brown. Cool one minute on cookie sheet
if you can. Cool completely. Store in air-tight container those you
haven't eaten because they taste so good.
