Cinnamon Surprise Coffee Cake
This is a really moist coffee cake with a swirl of cinnamon goodness
in the center.
Preheat oven 350 degrees
greate a 12 cup bundt pan or 2 - 9x5 loaf pans (I cook mine in a
stone bundt pan and it's superb!)
Filling: mix together 1T cinnamon, 4T softened butter, 1/3 c brown
sugar, and 2T flour - set aside
Cake: 3c flour
2t baking powder
3 eggs
2t vanilla extract
1/2 t baking soda
1/2 t salt
1- 16 oz package sour cream
1/2c butter at room temperature
1 1/2c sugar
combine flour, baking powder, baking soda and salt in bowl - set
aside cream butter and sugar in large bowl. Beat in eggs one at a time
incorporating fully each time. Beat in vanilla and sour cream.
Gradually add dry ingredients beating well. Spoon half of the
batter into the bundt pan. crumble cinnamon sugar mixture on top.
Top with remaining batter. Swirt with a knife. Bake at 350 degrees
for 50-60 minutes. Invert on cooling rack and cool completely.
Dust with powdered sugar.
